WHAT INSPIRED YOU TO BECOME A BARTENDER?

I came to Australia as a student from Hong Kong, and since then I’ve fallen in love with the story-telling around alcohol and even the drinking part! However, I’ve also witnessed many drunk scenes with people who don’t appreciate alcohol, which annoys me. Maybe one day we can change the world and give a better drinking environment to the general public.

WHO IS YOUR BIGGEST INFLUENCE?

There are so many to be credited back! Without all the encounters with the industry icons and guests, I wouldn’t be the same. Thank you to everyone I have met and worked with. But if there is one person I have always wanted, send my massive gratitude to Hayden Lambert from Above Board. He changed my life from every angle, from a naive young boy who could barely speak an English sentence (couldn’t even order a Negroni!) to the current me. Thank you, Hayden.

Voracity

Voracity is just a fun drink made and surrounds the Volcan Tequila. It has excellent stone fruit characters and a nice floral-ness to enhance the tequila. But more importantly, it’s clean and sharp. Think of combining a wet martini and the classic Toreador but with a delicate touch of Tea.

• Saison Aperitif Fallen Quince

• Dong Ding Oolong-infused Verjus

• Chrysanthemum infused Mancino Bianco

One or Two

One or Two is a contemporary “Hide-out Bar” inside Chinatown in Melbourne. It’s inspired by “Midnight Diner” and follows the idea of “Wabi-Sabi” - which also means living and embracing the imperfect, impermanent. That could apply to our decorations, drinks, service or styles. 24 Seats, 8 cocktails, 60 whiskies, 3 wines, 2 beers. To keep it simple but also essential. Back in May 2022, we signed the lease and kickstarted the One or Two Bar project. Fortunately, we could open One or Two with the right timing and location. What a journey so far. And we have just celebrated our first birthday this October; time flies.
