WHAT INSPIRED YOU TO BECOME A BARTENDER?

I did a trial as a glassy and watched the bartenders mixing drinks and the energy was different to anywhere else I had worked, it was love at first sight.

WHO IS YOUR BIGGEST INFLUENCE?

Definitely the team when I started at Late Night Valentine, if it wasn’t for all of them and what we did I doubt I would have come this far.

A fun summer crusher, served in pairs, can be shared or saved for later. Fight off post-tropical holiday blues and embrace a shared love of frozen pink drinks with this delicious cocktail.

Old Young’s Pavlova Vodka is an ode to an Australian classic and a summer delight, their manifesto is about embracing life and having fun. After a few hot days playing around with blender drinks, I realized how much the method embraces what Old Young’s believes in and I feel it represents the Pavlova Vodka well.

Ingredients

  • Old Young’s Pavlova Vodka

  • Lacto-Fermented Quandong Oleo

  • Plum Juice

  • Lemon Juice

  • Pinch of salt

Foxtrot Unicorn

I came to Foxtrot Unicorn a bit over 2 years ago and haven’t looked back. We’re located in an old gold vault underground and we’re about good booze and better times. We all have a love for Australian products, from quandongs to vintage soda signs, it is the driving force in our offering and something we are proud to be able to highlight.

Some places have history. Some places make history. Very few places do both. Foxtrot Unicorn is one such place.  Buried beneath the heart of Perth in an old bank vault, this well-concealed speakeasy cocktail bar is a curious and comfortable abode. Decked out with red leather couches and jarrah-wood furnishing, Foxtrot Unicorn feels like a maze with so many different corners to explore. The curious décor feels like a treasure-hunt, and over the course of the night you’ll discover everything from a bottle-green safe to a taxidermized, party-hat-wearing fox.
