WHAT INSPIRED YOU TO BECOME A BARTENDER?

I started bartending when I was 18 in a small pub in my hometown, Bathurst. I didn’t know anything, but it was a brilliant introduction to the communal connection that hospitality can create. I fell in love with it in Sydney, barbacking at Shady Pines. The euphoria, the frenetic energy, the colossal personalities. It’s a passionate industry, full of people who care, and that was infectious.

WHO IS YOUR BIGGEST INFLUENCE?

My parents.

Cocktail

The hero cocktail

Daintree Negroni

A textural rhapsody, championing the best qualities of the classic negroni and a collection of Australia’s best rainforest producers & farmers.

Nature reminds us every day that in order to make a good cocktail, good beer, good food and good wine, you first need a garden, a field, an orchard and a vineyard - and above all, men and women to take care of them.

Ingredients

  • Cherry Campari

  • Gin

  • Daintree Chocolate Wine
