WHAT INSPIRED YOU TO BECOME A BARTENDER?
Before I even thought about cocktails, I fell in love with Tasmanian gin. There’s something so special about this island I get to call home, and
all the distillers here are so passionate about producing quality spirits. I wanted to learn everything I could, and eventually found myself behind the bar giving recommendations to customers. From there, it was really only a small step towards proper bartending! The freedom and creativity in making cocktails is so gratifying - I can’t imagine doing anything else.
WHO IS YOUR BIGGEST INFLUENCE?
Without a doubt, my biggest influences are the women around me in this industry. Ana Mitchell, Andie Bulley, Judith Zhu, Millie Tang, Hayley Morrison... the list never ends. And
my rookies at my venue push me every day
to become a better bartender, manager, and mentor. I love them endlessly, and wouldn’t be where I am today without them.
Cocktail
The hero cocktail
Epitome
Makers Mark, spiced salvaged wine reduction, maple
and apple shrub, and cinnamon orange blossom honey come together in one drink to represent all-things Rachel. Garnished with an orange blossom tuille and cranberry caviar, it’s an exciting drink from start to finish.
There’s a running joke that every cocktail I make has a wine reduction or vinegar in it, so I leaned into it this time! I’ve used only my favourite methods, ingredients, and flavour pairings to create a drink that is 100% unapologetically “me.” I do my best creative work at home in my kitchen, so every aspect of my drink can be recreated in any venue and by any bartender. There’s no fancy equipment here!

Boodle Beasley
Boodle Beasley is like if you built a thrift store inside a heritage-listed building, gave it 20 beer taps, and a huge backyard garden. None of the chairs match, the tables are all different, and the decor is loaded with character. I love every inch of it. After working my way up in management at a few different venues one the past two and a bit years, I got the exciting opportunity to venue manage Boodle this past March! For the first time in a long time, I feel like I’ve found a home.
